3 Cups cooked cubed chicken

2 cups pineapple chunks, drained

1 tsp. curry powder

2 finely chopped celery stalks

1/4 tsp salt

3/4 cup mayonnaise

1 banana, sliced (or more)

1/2 cup salted peanuts

1/2 cup flaked coconut

11 oz can mandarin oranges 

Mix all together.   If you are going to refrigerate for a while, make sure the bananas are covered with sauce.   I got this recipe from Kim Stanley, in 1987, when she lived in Lechlade, Glos.
