3 lbs carrots                            1/4 cup maple syrup

1/2 tsp. salt                               1/4 tsp. ground nutmeg

1/4 cup butter

Cut carrots crosswise into halves, then lengthwise into quarters.  In large skillet, simmer carrots in 1-1/2 cups water and 1/2 tsp salt about 10-15 minutes or until tender.   Drain in colander, then return to pan and add butter, maple syrup and nutmeg.  Cook over medium heat, stirring occasionally until carrots are glazed.  I like to put them in the oven to glaze, while I am doing other things.  (make sure not to overcook the carrots)
