Recipe discovered in Ontario, Canada.   Definitely a family favorite, and is good with alternate, butters, milks and flours, for all you vegans, and GF folks out there!

2 Tbsp Butter                1 Tbsp Chicken Bouillon (or vegetable)

1/4 cup chopped onions                 3 cups whole milk (I use cashew)

2 cups diced raw white potato          1 cup boiling water

3 Tbsp Flour                    Salt, pepper, parsley

1 cup shredded cheese

Method:    Melt butter in saucepan.   Saute onion until tender.   Add potato, water & oxo (bouillion).  Cover, and simmer for 10 – 15 minutes.   Smoothly combine milk and flour in bowl and stir.   Add to pot.    Cook and stir over medium heat until mixture boils and thickens.   Add spices.    Ladel into bowl.   Add cheese to tops of soup in bowls.     Serves 4.
