2 pkg. frozen broccoli spears 1 Cup Grated Cheese or More
2 Cans Cream of Chicken Soup 1 cup crushed Ritz Crackers
6 chicken breasts, cooked and de-boned **
Cook broccoli and place in bottom of 13″ x 9″ pan. Cover with chicken chunks. Pour soup undiluted over chicken. (sometimes I mix a cup of sour cream in, but you don’t have to) Sprinkle lots of grated cheddar on next, then add the crushed Ritz. Bake, uncovered, at 350 Degrees Fahrenheit for about 30 minutes or until it starts to brown and bubble.
** You can cook the chicken any way you like. I usually boil it in deep water for at least 2 hours. In the water I put peppercorns, celery sticks and an onion.
